Pumpkin Muffins/Bread

Ingredients

  • 2 cups pumpkin
  • 4 eggs
  • 1 cup vegetable oil
  • 1/3 cup water
  • 3 1/2 cups flour
  • 3 cups sugar
  • 1 tablespoon pumpkin pie spice (or cinnamon)
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt


Directions

 

  1. Combine pumpkin, eggs, oil & water.  Add pumpkin mixture to other dry ingredients.  Pour into 2 greased and floured 9x5 loaf pans.
  2. For the large bread pans, Bake at 350 degrees for 1 hour and 10 minutes.
  3. For muffins, bake for 20 minutes
  4. For mini-loaves, bake for 45 minutes.
