Pumpkin Muffins/Bread Ingredients 2 cups pumpkin 4 eggs 1 cup vegetable oil 1/3 cup water 3 1/2 cups flour 3 cups sugar 1 tablespoon pumpkin pie spice (or cinnamon) 2 teaspoons baking soda 1 1/2 teaspoons salt Directions Combine pumpkin, eggs, oil & water.  Add pumpkin mixture to other dry ingredients.  Pour into 2 greased and floured 9x5 loaf pans. For the large bread pans, Bake at 350 degrees for 1 hour and 10 minutes. For muffins, bake for 20 minutes For mini-loaves, bake for 45 minutes.
